Rhubarb & Apple Crumble

Ingredients

1 x bunch rhubarb (~600gm) cut into 3cm pieces
5 x granny smith apples peeled, cored & cut into 1/8ths
1 x cup caster sugar
Crumble
3 x tbsp almond meal
4 x tbsp rice flour
2 x tbsp desiccated coconut
2 x tbsp white sugar
1.5 x tbsp melted butter or margarine
Method

  1. Pre-heat oven to 180 C
  2. Combine rhubarb with caster sugar and cook over low heat for 15mins, stirring occasionally
  3. Add apples to rhubarb and simmer for a further 15 minutes, stirring occasionally
  4. While apples and rhubarb are simmering, mix all crumble ingredients together in a bowl, firstly with a knife blade and then with your fingers
  5. When apples & rhubarb have simmered for the designated time, transfer to a 10cm oven-proof dish
  6. Sprinkle crumble evenly over apple rhubarb mixture
  7. Bake in oven for 25mins
  8. Serve with cream or ice-cream
