Black-Eyed Peas [Slow Cooker]

This makes a great tasting change from baked-beans on toast. Makes 8+ serves.

Ingredients
  • 6 cups water
  • 1 tsp chicken stock powder
  • 500 gm dried black-eyed peas (we buy these from our local Indian food shop)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium capsicum, seeded & diced
  • 1 jalapeño chile, seeded & minced
  • 2 cups diced ham
  • 1 cup diced bacon
  • 1/2 tsp cayenne pepper
  • 1 1/2 tsp cumin
  • 1 tsp black pepper
Method
  • Spray inside slow cooker with oil
  • Mix stock powder in 6 cups of water & pour into slow cooker
  • Rinse black-eyed peas & combine in cooker with all other ingredients
  • Cover the slow cooker  & cook on low for six hours
